Have you ever tried black rice? It has the largest amount of protein, fiber and iron compared to other types of rice. One of Chef David’s favorite to prepare; it’s delicious, incredibly good for you and one of the healthiest grains you can eat.

The story goes, in ancient times the Emperor of China discovered this special black rice and found out it had super nutrients and effects. Not wanting any competition and all the special powers to himself, he made it “forbidden” for anyone else to eat it but him. But now, thanks to Two Brooks Farm, a 10th generation farming family located in the Mississippi Delta recently released the Sable Black Rice for everyone to enjoy in the most organic, sustainable, healthiest way possible.

Chef had the honor of attending the Eat Y’all Chef Camp in March and was introduced to this extraordinary powerhouse grain. Black rice is a fantastic alternative to white and/or brown rice because it is loaded with antioxidants, gluten free and has a delicious, slightly sweet nutty taste.

Although the grains tend to look black when uncooked, they are in fact a deep purple-burgundy. This flavorful rice can be prepared like any other rice and is quick and easy to make and pairs well with many mains.

Ingredients

  • 1 cup Two Brooks Farm sable rice
  • 2 cups water
  • 1 Bay leaf
  • juice of one lime
  • zest of one lime
  • 2 tablespoons of cilantro
  • salt and pepper to taste

Directions

Bring water, bay leaf, and rice to boil. Cover rice and simmer for 45 minutes until done; Chef David prefers al dente. Fluff rice with fork add lime juice, zest, cilantro and season with salt and pepper. Serve with your favorite protein and veggie and enjoy!
